Mix the oats, flax seeds, chia seeds, cinnamon, ginger, cardamom, nutmeg, and salt in a large bowl until the spices are evenly distributed.

Stir in the soy milk, mashed bananas, grated carrots, chopped dates, vanilla, and half of the chopped nuts, mixing until the fruit and vegetables are thoroughly incorporated.
