This dish reimagines the classic Indian carrot dessert as a wholesome baked breakfast. Grating the carrots finely ensures they melt into the oats, creating a texture reminiscent of slow-cooked halwa with far less effort.
Instructions
Preheat the oven to 350Β°F.
Mix the oats, flax seeds, chia seeds, cinnamon, ginger, cardamom, nutmeg, and salt in a large bowl until the spices are evenly distributed.
Stir in the soy milk, mashed bananas, grated carrots, chopped dates, vanilla, and half of the chopped nuts, mixing until the fruit and vegetables are thoroughly incorporated.
Transfer the mixture to an 8 or 9-inch baking dish and sprinkle the remaining nuts across the surface. Bake for about 30 minutes, until the oats are tender and the liquid has been absorbed.
Serve warm, topped with a splash of warm milk, a drizzle of maple syrup, and an extra pinch of cinnamon.
