Warming Tortillas
Techniques for soft and charred results
Why This Recipe Works
Properly warming tortillas transforms them from stiff and dry to soft and flavorful vessels. A quick char adds a smoky depth that store-bought tortillas often lack.
Instructions
Toast the tortillas directly over a gas flame on medium heat until the edges are charred and they smell toasted. Use tongs to flip them after about 30 seconds once the underside is speckled and blackened.
Heat a dry skillet over medium-high heat until hot if using an electric stove. Warm each side for about 30 seconds until the tortilla is softened and speckled with brown spots.
Stack the warm tortillas in a clean kitchen towel or a covered warmer immediately. This traps the steam, which ensures they stay soft and pliable rather than becoming brittle. Serve immediately while they are still soft and steaming.
