Broccolini with Garlic and Parmesan
A quick steam-and-sautΓ© method for tender stalks and vibrant flavor
Why This Recipe Works
Steaming broccolini directly in the skillet before finishing it with a garlic-infused oil ensures the stalks are perfectly tender without overcooking the delicate tops. The final dusting of Parmesan adds a savory saltiness that balances the subtle heat from the pepper flakes.
Instructions
Stir the oil, garlic, and pepper flakes together in a small bowl and set aside to infuse while you start the vegetables.
Bring the water and salt to a boil in a 12-inch nonstick skillet over high heat.
Add the broccolini to the boiling water in an even layer. Cover the pan, reduce the heat to medium-low, and steam until the broccolini is bright green and the stalks are tender, about 5 minutes.
Remove the lid and increase the heat to medium-high. Cook until any remaining liquid in the skillet has evaporated.
Push the broccolini to the edges of the pan to clear the center. Pour the garlic mixture into the middle and cook, mashing the garlic into the skillet with a spatula, until fragrant.
Toss the garlic and oil with the broccolini until every stalk is well coated.
Transfer the vegetables to a warm platter and sprinkle with the Parmesan. Serve immediately while still hot.
