Instructions
Toast the cumin seeds in a dry pan over medium heat until they turn a dark chocolate color. Lightly crush them with a mortar and pestle.
Grate the cucumber and squeeze it firmly in a sieve over the sink to remove as much excess liquid as possible.
Combine the yogurt, squeezed cucumber, mint, salt, and half the toasted cumin in a bowl and mix well. Garnish with more cucumber and the remaining cumin before serving.
