Maple-Orange Mashed Sweet Potatoes
A bright, citrusy twist on a classic holiday side dish
Why This Recipe Works
The addition of fresh orange zest provides a sharp, aromatic contrast to the dense sweetness of the potatoes. This method of drying the potatoes in the pot before mashing ensures a light, velvety texture rather than a watery one.
Instructions
Place the sweet potatoes and salt in a large saucepan and cover with water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender and easily pierced with a fork, about 15 to 20 minutes.
Drain the potatoes thoroughly and return them to the warm saucepan. Place the pot over low heat for about 1 minute, shaking the pan occasionally, to cook off any remaining moisture.
Add the butter and milk to the pot. Mash with a potato masher or a sturdy whisk until the mixture is smooth and the butter is fully incorporated.
Stir in the maple syrup and orange zest. Season with black pepper and serve immediately while hot.
