Instructions
Adjust the oven rack to the middle position and heat the oven to 350°F.
Rub the potatoes lightly with oil and place them directly on the oven rack. Bake until a paring knife easily pierces the flesh and the skin is crisp, about 1 hour and 15 minutes.
Remove the potatoes from the oven and immediately pierce the top with a fork several times in the shape of an X to create a vent. Press the ends inward to push the fluffy flesh upward and release the steam—trapped steam will make the interior soggy.
