Braised Brussels Sprouts with Shallot
A gentle braise that keeps the sprouts vibrant and tender.
Why This Recipe Works
This braising method avoids the bitterness of high-heat roasting by gently steaming the sprouts in savory broth. Finishing the dish uncovered allows the liquid to reduce into a light glaze that coats the vegetables.
Instructions
Melt the butter in a 12-inch nonstick skillet over medium heat. Add the shallot and salt and cook until the shallot is softened, about 2 minutes.
Add the Brussels sprouts, broth, and pepper and bring to a simmer. Cover the pan and cook until the sprouts are bright green, about 9 minutes.
Uncover and continue to cook until the sprouts are tender and the liquid has reduced enough to lightly glaze the vegetables, about 2 minutes.
Season with additional salt and pepper to taste and serve warm.
