Creamy Quinoa Breakfast Porridge
A protein-packed alternative to oatmeal with a delicate nutty crunch
Why This Recipe Works
Quinoa provides a protein-rich base for this porridge, offering a slightly nutty flavor and pleasant chew compared to traditional oats. Simmering the grain in milk during the final stage of cooking creates a creamy, custard-like texture that pairs perfectly with fresh fruit.
Instructions
Bring the quinoa, water, and salt to a simmer in a medium saucepan over medium-high heat. Once bubbling, reduce the heat to low, cover, and simmer until the quinoa is just tender and the water is mostly absorbed, 15 to 17 minutes.
Uncover the pan and stir in the milk. Cook over medium-low heat, stirring frequently to prevent sticking at the bottom, until the milk is mostly absorbed and the mixture reaches the thick consistency of porridge, about 10 minutes.
Stir in the blueberries, almonds, and honey until well combined. The residual heat will slightly soften the berries.
Serve warm, adding an extra splash of milk to each bowl if you prefer a thinner consistency.
