Why This Recipe Works

These single-ingredient crisps rely on the natural fats and proteins in hard cheese to create a brittle, lacy texture. They are as much a technique as a recipe, requiring just a bit of patience to let the cheese set before flipping.

Sprinkle half of the cheese over the bottom of a 10-inch nonstick skillet. Cook over medium-high heat until the edges are lacy and toasted, about 4 minutesβ€”shake the pan occasionally to ensure even distribution and use a spatula to tidy the outer edges to prevent burning.

Remove the pan from the heat and allow the cheese to set for 30 seconds. This brief rest makes the wafer structural enough to flip without tearing.

Using a fork and a spatula, carefully flip the cheese wafer over and return the pan to medium-high heat. Cook until the second side is golden brown, about 2 minutes.

Slide the cheese wafer out of the pan onto a plate and repeat the process with the remaining cheese. Serve while still crackling and crisp.
