Instructions
If using dehydrated garlic, soak in cold water for 4 minutes and drain for 15 minutes first. For fresh garlic, simply slice it thinly and evenly.
Heat the oil in a small saucepan over medium heat for a minute. Add the garlic and stir. Once bubbles form rapidly around the garlic, turn the heat to low.
Fry for about 3 minutes (or 7 minutes for dehydrated chips), stirring often until the chips reach a uniform golden color. If they darken too fast, pull them off the heat immediately.
Strain the garlic over a heatproof bowl to save the oil. Spread the chips on paper towels to cool and harden into crispy flakes.
