Mash the softened butter and chives together in a small bowl until the herbs are evenly distributed.
Spread the chive butter evenly over one side of each bread slice.
Place four slices of bread on a work surface, buttered side down. Arrange the Gruyère pieces evenly across the bread slices, then top with the remaining bread, buttered side facing up.
Place the sandwiches in a large nonstick skillet over medium-low heat. Cook until the bread is deeply golden brown and the cheese begins to soften, about 4 to 6 minutes.
Flip the sandwiches and continue cooking until the second side is golden brown and the cheese is completely melted, another 4 to 6 minutes. Adjust the heat as needed if the bread is browning faster than the cheese is melting.
Serve immediately, while the cheese is still hot and pulling.
