Why This Recipe Works

Gently crack the cardamom pods with a mortar and pestle. Place them in a saucepan with a quart of cold water, the sugar, cinnamon, and saffron strands. Bring the mixture to a boil and then lower the heat to simmer for 5 minutes, allowing the spices to release their color and scent.
