Why This Recipe Works

These elegant samosas combine the sweetness of melted leeks with the brightness of fresh mint and peas. They are light, sophisticated, and particularly refreshing during the summer months.


Instructions

Melt the oil and butter in a large pan. Add the mustard seeds and wait for them to pop before adding the onions. Fry for 10 minutes until golden.

Add the ginger and leeks, cooking for another 10 minutes until the leeks are soft and sweet. Stir in the peas, spices, salt, and lemon juice. Cook for a few minutes then remove from heat to cool.

Once the mixture is no longer hot, stir in the fresh chopped mint. Cut buttered filo sheets into strips and fold into triangles around the filling.

Brush the exterior with melted butter and bake at 400Β°F for 15 minutes. They are done when the pastry is beautifully golden and crisp.
