Combine the water, vinegar, miso, soy sauce, honey, ginger, and garlic in a blender. Process until the ginger and garlic are finely chopped, about 15 seconds.

With the blender motor running, pour in the canola oil and sesame oil in a slow, steady stream. Continue blending until the dressing is completely smooth and emulsified, about another 15 seconds.
