Miso-Sesame Dressing
A savory, umami-rich vinaigrette with a fresh ginger kick
Why This Recipe Works
Red miso provides a deeper, savory backbone than white miso in this versatile dressing. It is robust enough to stand up to hearty kale or serve as a flavorful glaze for blanched green beans.
Instructions
Combine the water, vinegar, miso, soy sauce, honey, ginger, and garlic in a blender. Process until the ginger and garlic are finely chopped, about 15 seconds.
With the blender motor running, pour in the canola oil and sesame oil in a slow, steady stream. Continue blending until the dressing is completely smooth and emulsified, about another 15 seconds.
Serve immediately over fresh greens or store in a sealed jar. The consistency should be creamy and thick enough to coat the back of a spoon.
