Roasted Broccoli with Almonds + Cardamom
A creamy, spiced twist on roasted broccoli featuring ground almonds and cardamom
Why This Recipe Works
The key to this dish is ensuring the spiced almond mixture is packed deep into the crevices of the florets before roasting. Charring the edges provides a smoky contrast to the creamy cardamom marinade.
Instructions
Preheat the oven to 400Β°F and line two large baking pans with parchment paper to prevent sticking.
Break the broccoli into bite-sized pieces. Combine the cream cheese, black pepper, cardamom, salt, nutmeg, yogurt, ground almonds, and lemon juice in a large bowl and mix until smooth.
Add the florets to the bowl and use your hands to coat them thoroughly, pressing the mixture into the nooks and crannies of each piece.
Spread the broccoli across the prepared pans in a single layer. Roast for 10 minutes, turn the pieces over, and cook for another 10 minutes until the broccoli is tender and the edges are charred and crunchy.
Pile the broccoli high on a serving plate and serve immediately while still hot and crisp.
