Chewy Date + Nut Balls
Khajoor Pak
Why This Recipe Works
These addictive, toffee-like balls are naturally sweet and packed with protein-rich nuts and dates. They are the perfect healthy snack to keep on hand for a quick boost of energy and spice.
Instructions
Set up a plate with a layer of desiccated coconut for coating. Blend the dates, coconut oil, and cardamom in a food processor until a thick dough forms.
Knead the chopped nuts into the date dough by hand. If it is too sticky, a small amount of coconut oil on your palms will help.
Roll the mixture into small, uniform balls about the size of a marshmallow, then roll them through the coconut until evenly coated.
Chill the balls in the fridge before eating; the cold temperature hardens the dates and creates a satisfyingly chewy, toffee-like texture.
