Why This Recipe Works

These lacy cheese wafers rely on the natural oils of Parmesan to fry themselves into a crisp, nutty snack. The key is monitoring the edges to ensure they reach a deep gold without crossing into bitterness.

Instructions

1

Sprinkle half of the cheese over the bottom of a 10-inch nonstick skillet. Cook over medium-high heat—the cheese should bubble and the oil should release—shaking the pan occasionally until the edges are lacy and toasted, about 4 minutes. As the cheese melts, use a spatula to tidy the outer edges to prevent them from burning.

2

Remove the pan from the heat and allow the cheese to set for 30 seconds. Using a fork and spatula, carefully flip the cheese wafer over and return the pan to medium-high heat.

3

Cook until the second side is golden brown, about 2 minutes. Slide the cheese wafer out of the pan onto a plate and repeat the process with the remaining cheese. Serve immediately while still crisp.
