Why This Recipe Works
Sharbat is a classic Persian-rooted refreshment made by diluting a flavored syrup with water. Using jaggery instead of refined sugar provides a deep, caramelly backbone to the bright citrus and sharp ginger.
Instructions
Combine the lime zest, jaggery, ginger, and water in a small saucepan over medium-high heat. Bring the mixture to a boil, then reduce the heat to medium-low and simmer until the jaggery is completely dissolved and the liquid has slightly reduced, about 5 minutes.
Remove the pan from the heat and let the syrup stand for 15 minutes to allow the ginger and lime to fully infuse.
Strain the syrup through a fine-mesh sieve into a glass jar and stir in the lime juice. Refrigerate until completely cold, at least 2 to 3 hours.
Mix the chilled syrup into water, adjusting the amount to your preferred sweetness. Serve immediately over crushed ice with lime wedges and mint.
