A thoran is a fast Keralan stir-fry that brings out the best in hearty greens. This version uses shredded sprouts, cooked hard and fast with coconut and curry leaves for a bright, wintry dish.
Instructions
Shred the sprouts very thinly using a food processor or a sharp knife to ensure they cook quickly and evenly.
Heat the coconut oil until hot, then add the mustard seeds and curry leaves, waiting for them to sizzle and pop before stirring in the red onion.
Cook the onion until soft and caramelizing, then add the garlic, chile, and coconut, stir-frying until the raw garlic scent vanishes.
Increase the heat and toss in the shredded sprouts. Stir-fry vigorously for 4 minutes, then add the salt and lemon juice, cooking for 2 more minutes until the sprouts are tender but still vibrant.
