Skillet-Charred Green Beans with Garlic and Lemon
Blistering heat and a quick steam create the perfect balance of char and snap.
Why This Recipe Works
Combining a high-heat sear with a quick steam allows the beans to develop deep, charred spots while remaining vibrant and crisp. Finishing with a flavored butter ensures the garlic stays fragrant without burning in the high heat of the skillet.
Instructions
Combine the butter, garlic, and thyme in a small bowl and set aside. Heat the oil in a 12-inch nonstick skillet over medium heat until it just begins to smoke. Add the beans, salt, and pepper and cook, stirring occasionally, until the beans show spotty brown patches, 4 to 6 minutes. Add the water, cover the pan immediately, and cook until the beans turn bright green but remain crisp, about 2 minutes.
Uncover the skillet and increase the heat to high. Cook until the water has completely evaporated, about 30 to 60 seconds. Add the garlic-thyme butter and cook, stirring frequently, until the beans are crisp-tender, lightly browned, and beginning to wrinkle, 1 to 3 minutes. Remove the pan from the heat, stir in the lemon juice, and season with additional salt and pepper to taste. Serve immediately on a warm platter.
