Tarator (Turkish Nut Sauce)
A creamy, garlicky walnut sauce for dipping or drizzling over roasted vegetables
Why This Recipe Works
This classic Turkish sauce uses a base of walnuts and soaked bread to create a rich, creamy texture without any dairy. It is traditionally served with fried vegetables, though it works equally well as a thick, garlicky dip for warm flatbread.
Instructions
Mash the bread and water together in a small bowl with a fork until they form a thick, uniform paste.
Combine the bread paste, walnuts, oil, lemon juice, garlic, salt, pepper, and cayenne in a blender and process until the mixture is completely smooth, about 2 minutes.
Add additional water one tablespoon at a time until the sauce is just slightly thicker than the consistency of heavy cream.
Season with extra salt, pepper, and lemon juice to taste and serve at room temperature to allow the walnut oils to release their full flavor.
