Why This Recipe Works

This classic Turkish sauce uses a base of walnuts and soaked bread to create a rich, creamy texture without any dairy. It is traditionally served with fried vegetables, though it works equally well as a thick, garlicky dip for warm flatbread.


Instructions

Mash the bread and water together in a small bowl with a fork until they form a thick, uniform paste.

Combine the bread paste, walnuts, oil, lemon juice, garlic, salt, pepper, and cayenne in a blender and process until the mixture is completely smooth, about 2 minutes.
