Why This Recipe Works
Beautifully coiled and flecked with gold, the Malabar paratha is the poster bread of South India. It requires patience and multiple resting periods, but the reward is a bread so flaky it peels away in delicate layers.
Instructions
Mix melted butter into the flour until crumbly, then knead with warm water into a sticky dough and let it rest in a warm spot for one hour.
Divide into balls and rest for another 20 minutes before rolling each into a circle, brushing with butter, and coiling into a tight 'snail shell' shape.
Flatten the coils and roll them out again, then fry in a hot pan while basting with more butter until both sides are crispy and charred.
