Named for the nine gems of its traditional namesake, this stir-fried rice is a lighter and faster alternative to a layered biryani. It combines a specific balance of vegetables, nuts, and dried fruits to create a texture that is simultaneously crunchy, tender, and sweet.
Instructions
Combine the saffron and hot water in a small bowl and set aside to infuse.
Heat the oil in a large, wide pan over medium heat. Add the cumin seeds and toast until they start to brown and become aromatic, about 1 minute.
Increase the heat to medium-high and add the carrot, red bell pepper, corn, peas, and salt. Cook until the vegetables are tender and just beginning to brown, about 5 minutes, lowering the heat if they color too quickly.
Lower the heat to medium and stir in the garlic and ginger until fragrant. Add the cashews, almonds, pistachios, dates, raisins, coriander, red chili, garam masala, and turmeric, stirring for 1 to 2 minutes until the spices are toasted and the fruit is softened.
Add the rice and the prepared saffron water to the pan. Stir well to ensure the rice is evenly colored and heated through.
Adjust the salt to your preference, squeeze the lime juice over the rice, and top with cilantro, mint, and pomegranate arils. Serve hot.
